THE OENOLOGIST’S WORK

This wine is vinified especially for Maison Viallet by “Les Vignerons d’Aghione”.

The vines grow on clay and limestone soil between sea and mountains.

Vinification

The harvest are made at night in order to preserve the grapes from the oxidation.

The sommelier’s description

The color is a pretty pastel pink mingled with slight salmon tones. The nose is spicy and delicate. This wine is fresh and balanced on the palate, where we find the spicy notes from the nose.

Food & wine pairings

It pairs well with corsican dishes like Brocciu or delicatessens. It pairs also well with fish and pork.
